You can create a cubic environment map by rendering six views from the same point towards each positive and negative axis, with FOV of 90 degrees.

As for spherecial maps, Paint Shop Pro can do it. I''m sure Photoshop can do it, but that''s much much more expensive. Cubic maps can be calculated at realtime just as selkrank said.
