Most common protocols are text-based: HTTP, FTP, POP3.

Text-based protocols are a little bit harder to convert into discrete packets, typically you have to implement some sort of "read until I see a \n" type of logic instead of "read the first two bytes".

Yeap.

You could conduct an IRC session using telnet if you knew the commands (and were a masochist).

Bah! Take it as a challenge! ;) I've done some ircing with telnet when I needed some help on for example installing Linux but I didn't have an irc client yet.. Not that hard really.
