I know how to do it, but I am curious can you change the address to what u want, or is it just generated?

It is indeed possible under both Linux (and I'm guessing BSD, Solaris, etc, but I'm not sure) and Windows.

EDIT: But if you know how to do it... then surely you knew this?

The MAC address is typically stamped into the hardware, but it can be spoofed just the same. Here's some software that does it: SMAC. Here's a ton of information on the subject from the people that sell that software: Change (Spoof) MAC Address on Windows 2000, XP, 2003, VISTA. Here's some DIY code MAC Address Changer for Windows XP/2003.
