So, physics are supposed to be run with a fixed time step nowadays, and graphics with non-fixed time step. But what about input, AI and gameplay?

If your game is single player, then I would probably update those 3 things at the same rate as the graphics with a non-fixed time step.

However, if you are writing a multi-player game with a server-client architecture, I would probably set the server to run with a fixed time step. That would include AI and gameplay code, but not input. Input should always be grabbed as quickly as possible in order to reduce any delay between doing something and it appearing on the screen.
