Two great online books which you can read:

Randall Hyde''s "Art of Assembly Language" which has a new 32 bit version (its nice when you respond to a question and find something of use to yourself when you revisit the old sites)

Available in PDF from http://webster.cs.ucr.edu/

Michael Abrash''s graphics programming black book, goes through everything up towards Pentium level assembly, very good book on code optimization in general.

Available in PDF from http://www.ddj.com/documents/s=865/ddj0165f/

The intel developer site is often very good and full of fairly up to date information and whitepapers

http://developer.intel.com/

You may have to poke around there a bit but the information you need is often there, and its straight from the horses mouth so to speak.

I don''t know of much books covering SSE or 3D-Now (no doubt amd and intel are your best bets) as I havent really done any assembler in a few years but the sites I mention above should be more than enough to get you started.
