www.2dgame-tutorial.com is a decent 2D game tutorial. It goes over coding a side scroller, not a fighting game, but the two are similar. You also may want to check out Mugen, a fighting game creator. Even though the site of the company that makes it (www.elecbyte.com) is down. If you google it you should be able to get a lot of information.
