I see they use Unreal 2/2.5 for the Splinter Cell series. Do they have their own propriety engine though, and this goes for other AAA developers, which ones license out engines etc?

They have AnvilNext and they used CryEngine for Far Cry. Also use Google smile.png

Edit: Also I know EA shares a lot of their tech between the developers i.e. FrostBite uses the lighting from the NBA games. Info from a talk a guy from DICE gave last summer.

They used Dunia for their FarCry games, which includes some CryEngine tech, but is their own proprietary engine.

It's very common for devs to use their own engines - maybe 50/50.

I've worked in an office of 300 who used their own engine as well as Gamebryo for some projects, an office of 50 using Unreal, an office of 60 (and 300 more in other offices) using their own tech that was on par with Unreal (but sadly will never be seen by the public) and an office of 25 with their own tech, and now I work in my own office using my own tech.

Here the engine YETI is listed... Seems they have a lot of different engines?

I know two. Anvil engine for all the persia/creed games and the game engine they made used for watchdogs, Disrupt engine.
It's like they have an engine for every game. It's now Snowdrop engine for The Division.
UNREAL ENGINE 4:

Each of their major studios has it's own engine. Personally I find this a bit wasteful, since their engines need to share a lot of features (consider the technical requirements for the Division compared to Watch Dogs), bu hey, it keeps a lot of people employed.
