Then it is definitly Real-Time Rendering, 2nd ed., Tomas Akenine-Möller, Eric Haines. Good book on theory (lighting for example) with lots of pointers to free resources in www.

i second that! that book is truly a gem. it helped me a lot while working on my diploma thesis. it covers almost everything. really, it's a must-have :)

"Computer Graphics: Principles and Practice in C" is a good book, it covers lots of (important) basic stuff and it's definitely not amiss to read it. but it's kinda aged. so if you're into 3d programming, go for the book by akenine-möller/haines.

Thirded. Realtime Rendering follows me around the house as I move from room to room. It's the only book in my collection that spends no time on the bookshelf, since I'm almost always using it.

GPU Gems is a neat book too, though it may not be exactly what you're looking for. It's a whole set of tips/tricks for various graphical effects.
